The present educational presentation will first briefly motivate the use of fat-water separation. We will then review the chemical shift encoding principles and introduce the most important fat-water signal models. Algorithms to solve the fat-water separation problem will be then reviewed. Acquisition and reconstruction strategies for chemical shift encoding-based water-fat separation will be then described. As future perspectives, recent works using single-point Dixon and separating multiple chemical species will be briefly discussed.
